Payne Made is a cottage bakery in King George. The starter lives on the counter. The oven is a home oven. Every loaf is mixed, bulk-fermented, shaped, proofed, and baked by hand — which is why the shop runs a three-day production window and a bench capacity of nine loaf-equivalents.

Pickup is off Indiantown Rd. Write paynemadedough@gmail.com if you want a loaf that is not on the board this week. We would rather bake fewer things well than pretend this kitchen is a storefront oven.
